Banana Cake with Cream Cheese Frosting

Ingredients 2/3 cup shortening 1-1/2 cups sugar 2 large eggs, separated, room temperature 2 cups mashed bananas (about 4 medium)

1 cup 2% milk 3 cups all-purpose flour 1-1/4 teaspoons baking powder 1-1/4 teaspoons baking soda 1/2 teaspoon salt

cream cheese frosting: 1 package (8 ounces) cream cheese, softened 1/4 cup butter, softened 4 cups confectioners' sugar 1 teaspoon vanilla extract Dash salt

Directions Preheat oven to 350°. Cream shortening and sugar in a large dish for 5-7 minutes until frothy. Beat well after adding each egg yolk. Mix bananas and milk briefly. Blend flour, baking powder, soda, and salt. Just blend into whipped mixture.

In another basin, beat egg whites to soft peaks. Mix into batter. Grease a 13x9-inch baking pan. Bake until a toothpick inserted in the center comes out clean, 30-35 minutes. Cool thoroughly on wire rack.

Beat butter and cream cheese until frothy in a large bowl. Beat confectioners' sugar, vanilla, and salt until smooth. Apply to cake. Refrigerate. If preferred, serve with banana slices.
