Cottage Cheese Banana Bread

Ingredients: – 2 ripe bananas, mashed – 3 egg – 1/2 cup cottage cheese – 3 tablespoons maple syrup (adjust to taste for desired sweetness) – 2 teaspoons vanilla extract – 2 1/2 cups almond flour – 1 teaspoon baking soda – 2 teaspoons cinnamon – Optional mix-ins: walnuts, chocolate chips, or blueberrie

Instructions: 1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a bread pan with parchment paper and grease it lightly.

In a large bowl, mix together the mashed bananas, eggs, cottage cheese, maple syrup, and vanilla extract until smooth.

Add the almond flour, baking soda, and cinnamon to the wet ingredients. Mix until fully combined. Note: Depending on the brand of cottage cheese used, it may be chunky, but that is okay.

If desired, fold in any optional mix-ins such as walnuts, chocolate chips, or blueberries. Pour the batter into the prepared loaf pan, spreading it evenly.

Bake in the preheated oven for about 50 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover the loaf with foil after about 30 minutes of baking.

Once baked, remove the bread from the oven and allow it to cool in the pan for a few minutes.

Transfer the bread to a wire rack to cool completely. Once cooled, slice and enjoy!
