Cheeseburger Soup

Favorite Chicken Potpie

Ingredient – 2 cups diced peeled potatoe – 1-3/4 cups sliced carrot – 1 cup butter, cubed – 2/3 cup chopped onion – 1 cup all-purpose flour – 1-3/4 teaspoons salt – 1 teaspoon dried thyme

– 3/4 teaspoon pepper – 3 cups chicken broth – 1-1/2 cups whole milk – 4 cups cubed cooked chicken – 1 cup frozen pea – 1 cup frozen corn – 4 sheets refrigerated pie crust

Put the potatoes and carrots in a big pot and cover them with water. Bring the water to a boil, then lower the heat and let the vegetables cook for 8-10 minutes until they're almost tender.  

In a large frying pan, melt the butter over medium-high heat. Add the onion and cook it until it's tender. Stir in the flour and seasonings until they're mixed well 

In a large bowl, mix together the chicken, peas, corn, and the cooked potato-carrot mixture. Then, stir in the broth mixture. 

Put a pie crust into each of two 9-inch pie plates. Trim off any extra crust hanging over the edges of the plates 

ake the pies in the preheated oven for 35-40 minutes, or until the crusts are lightly browned.
