1. 1 cup (210g) red lentils, rinsed well 2. 3cm fresh ginger, sliced 3. 2 bay leave 4. 1 cinnamon stick 5. 2 tbsp (40g) Coles Australian Salted Butter 6. 1 large onion, finely chopped 7. 2 cloves garlic, crushed 8. 2 tsp turmeric 9. 1 tsp cumin 10. 1/2 tsp garam masala

1. 1/2 tsp chilli flake 2. 2 tbsp lemon juice 3. 1/2-1 tsp salt 4. 1 tbsp chopped coriander leave 5. Naan bread or pappadums, to serve

Method Steps: 1. In a large saucepan, combine the rinsed lentils, sliced ginger, bay leaves, and cinnamon stick with 3 cups of cold water.

Bring to a boil, then reduce the heat to medium and simmer, stirring to prevent sticking, for 10-12 minutes. Discard the spices and set aside.

Heat the butter in a large frying pan over medium-high heat. Add the finely chopped onion and cook for 3 minutes.

Stir in the crushed garlic, turmeric, cumin, garam masala, and chilli flakes, and cook for a further minute or until fragrant. Stir in the lemon juice and season to taste with salt.

Add the cooked lentils to the frying pan and mix well. Cook for a further 3 minutes, stirring constantly.

Remove from the heat, stir in the chopped coriander leaves, and serve hot with naan bread or pappadums. Enjoy your delicious lentil curry!
